Food Skills:

The Science of Confectionary (Candy making)

It’s like an edible chemistry lab for adults! All candies begin as a solution of sugar dissolved in water. Yes – brittle toffee, silky fudge, and chewy caramels are all made using the same basic ingredients! In this workshop, we will be learning about sucrose (sugar) molecules, and the basics of using time, temperature, and motion to manipulate crystallization processes in order to create different types and textures of candy. No memory of high school chemistry is necessary

Artisan Cheese Making 101

In this workshop, we will explore the history and science of cheese! Simply, cheese is preserved milk. Milk is preserved through a process of fermentation where milk sugars (lactose) are converted into lactic acid. The acid causes the milk to curdle (think: ‘sour milk’!), and the milk separates into curds and whey. The curds are then drained, salted, pressed, stored, and aged for various amounts of time in various ways to produce different types of cheese. In this workshop, we will make a simple fresh cheese such as ricotta, mascarpone, or paneer.

Babies:

Healthy Eating Pregnancy and with a Newborn

A helping hand on how to eat healthy in pregnancy! An overview of your increased dietary needs and how to fit them into your diet! We will make a complete vegetarian meal as well as homemade nut butter to take home 🙂 Also overview of great herbs to take while breastfeeding.

Safe Herbs in Pregnancy and Post Partum

An introduction to a few safe herbs to take in pregnancy and post partum while breastfeeding! We will be making an Iron Tincture together to take home as well as a wonderful breastfeeding tea!

Herbalism:

Intro to Herbal Medicine Part 1: Infusions and Infused Oils

This three part series will provide some basic foundational knowledge for those wishing to build a relationship with medicinal plants. Each workshop will touch on different preparation methods and the medicine that can be found in our neighbourhoods. In this workshop, learn about two simple and effective herbal medicine preparations to support and nourish the body and immune system. We will make an herbal oil which can be turned into salve or used as is, as well as discuss the many ways to use tea as medicine as we wander through the Trout Lake Medicine Wheel Garden.

Intro to Herbal Medicine Part 2: Healing Salves and Poultices

Description: This three part series will provide some basic foundational knowledge for those wishing to build a relationship with medicinal plants. Each workshop will touch on different preparation methods and the medicine that can be found in our neighbourhoods. In this workshop, we will learn about plants that can heal and nourish the skin, and make a salve for everyday cuts, scrapes and bites. After, we will take a short plant walk around Trout Lake to discover plants for healing small cuts and bites for when you forget your salve at home.

Intro to Herbal Medicine Part 3: Tinctures and Herbal Bitters

Description:This three part series will provide some basic foundational knowledge for those wishing to build a relationship with medicinal plants. Each workshop will touch on different preparation methods and the medicine that can be found in our neighbourhoods. In this workshop, we will take a short plant walk around Trout Lake and get to know some local medicinal plants, learn the body systems they support, and how we can best harness their medicine. Next, we will learn the difference between herbal tinctures and herbal bitters, and make one of each to take home.

Fermentation:

Water Kefir & Spring Sodas

Learn how to make water kefir and light bubbly seasonal wild sodas at home. Class price includes a water kefir culture, recipe booklet and fermentation jar.

Fermented Mustard

Learn how to make fermented grainy mustard in this class for condiment fanatics. Class price includes a jar of delicious mustard and a recipe booklet.
