Summer is in full swing.  The sun is out and so is the heat.  Sometimes you want a meal you don’t have to fire up the stove or the oven here’s a dish that could help you beat the heat.  Check out this no cook Carrot Noodle with Ginger-Lime Peanut sauce recipe

This week an order from Fresh Roots Urban Farm veggies! Every week throughout the summer we will be getting hyper local, organic veggies grown on school sites throughout Vancouver.

Seed Savers Meet-up #2

Interested in seed security in your community? Want to learn how to save seeds and join in a growing community of people wanting to share their knowledge, their passions, and their seeds?

The Cedar Cottage Food Network, in partnership with the Vancouver Public Library – kensington branch has teamed up to create our new seed saving group in Cedar Cottage. Join us for our second meet-up as we go through the process of saving seeds.

There will be a knowledge share on the particulars of saving certain varieties of seeds, followed by some time in the garden to maintain our seed crops. This will also function as an ongoing seed swap so bring your extra seeds and seedlings to share with the community!

  Welcome to June!  I had a lovely mint spinach pea soup this weekend and it was one of the best soups I’ve every had,  definitely in the top ten.  It was a little wet this week and this was such a great tummy warmer.  Check out this pea soup with a mint twist recipe

The Cedar Cottage Food Network is excited to launch our first Seed Savers Group! To promote local food security and resiliency we will be supporting community members in growing and saving our own seeds. Sabina’s Tofu Recipe

Long time volunteer Sabina shares with us her amazing recipe for home made tofu. Keep an eye out for upcoming workshops where Sabina will show us how to make it.

Ingredients

  • 400 g dried soybean
  • 1.7 L water
  • If conventional soybean
    • 25 g coarse sea salt
    • 30 g white vinegar
  • If organic soybean
    • 30 g coarse sea salt
    • 35 g white vinegar

Directions

  1. Soak dried soybeans with warm water (about 12-15 hours depending on cold or warm water), remove the skin of soybeans.
  2. Blend soybeans with 1.7 L water to get soybean juice, and boil in medium sized pot until it reaches 100 degrees Celsius. Turn off heat and skim off the foam.
  3. Remove pot from heat, add sea salt and vinegar and stir. Place lid on pot and let site for 15-20 min until tofu condenses.
  4. Wrap condensed tofu with moist cotton towel or cheese cloth, and press it for about 30 min for soft tofu, longer for harder tofu.
  5. Boil tofu with water a second time to remove salt and vinegar taste.
