Beet & Kale Pizza Recipe

IMG_0447It’s alright to be a little skeptical about this recipe – even I was at first! A taste of this beet pesto will have you singing a different tune.

This past Saturday, the Cedar Cottage Food Network opened another mobile produce market location at South Vancouver Neighbourhood House. Lots of people came by to check out what was for sale and enjoy samples. We’ll be there on the 4th Saturday of every month from 2-4pm going forward.

Here is the recipe from our Tasting Kitchen, where we make recipes with featured vegetables for sale at the market. This week, the focus was on beets and kale. If you make it at home, let us know if you like it!

Pizza

1 12″ inch pizza crust (pita bread or tortilla wraps can make a quick substitute)
1 cup beet pesto (recipe below)
2 cups kale leaves, thinly sliced
1.5 cups mozzarella cheese, grated
2 oz. goat cheese

Prepare the beet pesto and the pizza dough. Preheat the oven to 415 degrees F. Dust flour or cornmeal on a baking sheet and press or roll dough to desired thickness. Bake the dough for 5-7 minutes with no toppings. Spread the pesto over the dough, add the kale leaves and the cheese (kale will cook down in the oven). Bake pizza for 20-25 minutes until crust is crisp. Allow to cool before serving.

Beet Pesto

1 cup red beets, chopped and roasted
3 cloves garlic, roughly chopped
1/2 cup walnuts, roasted
1/2 cup parmesan cheese, grated
1/2 cup olive oil
2 tablespoons lemon juice
salt to taste

Preheat the oven to 375 degrees F. Wash and scrub the beets, then pat dry. Chop into cubes and wrap the beets in foil. Place the foil packet on a baking sheet and roast for 50 minutes or until beets are soft and juicy. Cool completely.

Add all of the ingredients except the oil into a food processor or blender and pulse several times. Leaving your chosen appliance running, slowly add the olive oil until all ingredients combine. You may add a bit of water to get your desired consistency.

The mobile market team has lots of fresh, affordable produce for you this week! Come by the market to pick up your oranges, apples, potatoes beets and everything listed below:

Mashed Turnip Recipe: Peel, wash, and quarter turnips. Boil 35-45 minutes or until tender. Strain and rinse cooked turnips. Place in large mixing bowl and use fork to break up turnips into smaller bits. Add milk and butter. Blend to desired consistency. Add salt and pepper to taste.

New Mobile Market Location

SVNHPosterJan2015The Cedar Cottage Food Network is proud to announce our newest mobile produce market location: South Vancouver Neighbourhood House!

South Vancouver Neighbourhood House (SVNH), located at 49th and Victoria, has been a longtime partner of the CCFN and has supported us with our transportation needs for the markets. To supplement our market at Orchard Park (45th and Nanaimo), we have added this new market in the neighbourhood so that our customers now have two markets to visit every month. Three cheers for increasing affordable food access!

The opening date is January 24th, 2015 from 2-4pm. Join us for the premiere Tasting Kitchen event at this location, where everyone is welcome to sample full servings of recipes made with ingredients for sale at the markets.

As always, we try to keep our produce as affordable as possible and most items continue to be only $1 at all locations. Hope to see you out at SVNH in a couple weeks.

After a short break, the mobile markets are back in action for our first market in 2015! To start the year off with a bang we will have an abundance of fresh veggies available, including:

  • Bananas (South America and Organic)

    Feeling under the weather? Try an apple, ginger, lemon cider!  Ingredients: - 5 apples, cored - a 4" chunk of ginger root - 1 tsp of turmeric - 1/2 lemon, juiced Directions: 1) Juice apple, ginger and lemon (or use apple juice) 2) Heat apple/ginger juice, lemon juice and water over medium high heat, until boiling. 3) Add turmeric and stir. 4) Enjoy!
